This is a great question, heel’s are never truly heels, to be a heel you need to be good and you need to behave like a douche while being really good.

The sport of wrestling is so factionalized along old lines with fanbases, some incredible behavior is excused as fans bow to the altar of victory.  Concurrently, because losing in wrestling sucks a lot, and winning is awesome, a great deal of behaviors done in enthusiasm rub the opposing side particularly poorly.  Typically, heel behavior can be sniffed out by unaffiliated third parties watching dispassionately, and it flies in the face of good behavior that the sport teaches at younger levels, reeking of entitlement and exceptionalism because of excellent performance.  To be a heel, you need to be in a lot of close matches, because you have to be able to rub close victories in people’s faces, or behave really emotionally and rather poorly in the heat of the moment.  We’re looking at you Dan Gable, John Smith and the Brands Brothers.  If you’re just dominant, your blood pressure doesnt get high enough to be a heel, which is where a lot of salt from the old timey programs is coming from now.  Lot’s of teams and athletes are doing it as good or better than traditional powerhouses without being schmucks after thenfact.

Perfect examples: hawkeye fans rooting for most gilman, ramos, desanto of old, cassioppi, sometimes marinelli and of course the brands brothers when they do stuff that would get you thrown out or penalized at any 3rd party venue.  If opposing teams did that in carver, bottles would be thrown on the mat.

OSU fans rooting for johnny hendricks, or believing that john smith is anything more than a petulant child in the corner for his athletes in big matches. Chris Perry was good but pretty insufferable.  Ferrari is brash, but he doesn’t really put anybody down, he just revels in being good in front of fans.

Ben Askren WAS viewed as a heel for intentionally not being a “wrestling guy” the way established wrestling culture professed he should be at the time, and was really good while doing it.  All he did was pin people while wearing tie-dye shirts.

NC State’s trying to get their own little thing going, Gwiz and Hidlay the younger seem to enjoy their own company in the mirror a good bit.

Sammy Henson, too competitive in everything to even see straight.

Notable non-dicks: Logan Steiber, Jordan Oliver, Kyle Snyder, Chris Pendleton, Tony Nelson

I don't know about Hendricks. He didn't really have heel like antics on the mat, other than close matches.  When he lost to Perry he just shook his hand and walked off the mat, no drama.

Back then he was labeled the heel of college wrestling. Commentators even talk about it during his finals match with Perry. Probably because the fans never really forgave him for his "win" over Churella.

Yeah, but you can't really blame Hendricks, he was just one of the guys on the mat. If anybody is pissed at the result of that match they should hold it against the ref (or Churella!).

I agree. He was the beneficiiary of poor officiating so we the fans unfairly took it out on him.

I remember an interview from years back where he said he tried to rile up the fans. If you google him now it will say he is one of the least liked UFC champs.  However, I know some people that had him in to do a clinic for MS/HS kids and they loved him- when he wasn't in the spotlight.
